Is 7.2 enough channels?

For most rooms, yes. Seven channels covers 5.1.2 with height speakers, which is the configuration most people actually end up with. Nine channels only matters if you are running both rear surrounds and two pairs of heights.

Do I need Audyssey?

Need is strong, but room correction is the cheapest large improvement available to a surround system. An untreated room does more damage to sound than the difference between these two receivers.

Will either drive tower speakers?

At sensible volumes in a normal room, yes. Neither will hold up driving demanding low-impedance towers loud in a large space, which is where separate amplification starts to matter.
